Cold Storage:

Though cold storage is understood to be just an application of refrigeration, it is actually a complete air-conditioning system in which room air is cooled at too much lower temperature on a cooling coil and delivered back to the storage space. The conditions maintained inside the storage space based on the nature of the product stored. This is to be noted down that in cold storages, frequently; firm control of both temperature and relative humidity is needed. Also, the storage life based on a great deal on the temperature on which a product is stock up. The needed storage conditions for a number of significant food products are given in given table. It is illustrated that in the case of bananas, there is no storage period. Rather than, there is a period of ripening. Bananas may not be stored after they have ripened. The best temperature for slow ripening is 14.5°C. Furthermore, in the case of milk, the storage temperature is 0.5°C, while its highest freezing temperature is - 0.6°C. Therefore, air is to be maintained in a close tolerance of 0°C in order that milk does not freeze. The similar is also true for the pasteurization procedure.
