The pancreas is an organ that secretes, into the small intestine, three classes of digestive enzymes that help break down fats, proteins, and carbohydrates. It also secretes "buffers" that raise the pH of the acidic chyme coming from the stomach. It is also responsible for producing the hormone insulin.
