Iodine value - Analysis of oils and fats

Iodine value of a oil or fat is a measure of its amount of unsaturation. It is proved as the number of grams of iodine taken up by 100 grams of fat or oil for saturation. For a saturated acid glyceride, the iodine value is 0. So, the iodine value for a fat is low while for oil, it is high. Since iodine does not react eagerly, in actual practice, iodine monochloride is employed. Iodine monochloride is termed as Wij's reagent.
