Explain the types of Carrageenan

It was first produced commercially from the red algae, Chandrus crispus, found along the northeast shores of the U.S and Canada and referred to as Irish mosh extract. Carrageenan is of 3 major types -kappa, iota and lambda as shown in the figure. These not only vary in composition but also in properties.
