Gum karaya is water-swellable rather than water-soluble and absorbs water very rapidly to form viscous colloidal dispersions at low concentrations. At higher concentrations (20 to 25%), gum karaya exhibits strong adhesive properties. Gum karaya dispersions are stable, however, will lose viscosity gradually if solutions are not preserved by the addition of preservatives.
