What is the difference among the geoid and the surface of the earth?

The geoid is an visualize surface that equal with the average (mean) sea level around the world.

Thus, it is not an actual or real thing like the continents themselves that form the surface of the earth, but merely a useful model that we can visualize to extend by the continents.
