Explain the Food preparation and Cooling - Canning?

Food preparation - Preparation methods will change with the type of food. For fruit, cutting to size, washing, grading, peeling, sorting, pre-cooking and pulping operations may be used.

Cooling - The processed cans should be cooled in chlorinated water to a temperature of 37°C. At this temperature the heat remaining is sufficient to permit the water droplets on the can to evaporate previous to labeling and packing.
