Q. Explain Microbiology of vegetables?

Ans.

All of us are well aware that vegetables are grown in soil, which, we already know, are a rnajor support system for the microbial growth. Vegetables being near and in tne ground may carry heterogeneous flora of microorganisms. Microorganisms are transmitted to vegetables if the soil or water is contaminated. Clostridiurn, Bacillus and Escherichia coli are the common organisms found in vegetables. Their presence ir; mostly superficial and not internalised. Salmonellaparatyphi, Shigella &serrteriae, nzicrospine chlorae are also found in vegetables.
