Explain Free Water - Water Found in Food?

Water which is bound by such minute forces, that its vapour pressure is equal to the vapour pressure of pure water. It can be found as free water, in cavities and wide capillaries.

This can often be thought of as the second and subsequent layers of moisture attached to a surface. The heat of adsorption of this moisture is equal to the normal heat of vaporisation of water at the same temperature.
