Explain Denaturation and coagulation

Denaturation and coagulation of the proteins are considered to be the chemical changes, since they involve the unfolding of proteins, which exposes certain chemical groups, such as the sulfhydryl group, thus altering the chemical reactivity of the proteins. Since water is an integral part of the protein molecule, its removal may cause certain changes to occur in the properties of egg white.
