Define the Water activity - Microbial Survival?

It is the amount of water available to the organism. In general, requirement for water activity is more for bacteria (minimum 0.90) than yeasts (minimum 0.8) and moulds (0.70) with few exceptions. No microorganisms are able to grow at aw below 0.61.
