Define the uses of foams

The foams frequently used in cookery are whipped cream, ice cream, cake, bread, meringues, milk froth and gelatin.  Food foams contain large amounts of entrapped gas. 

They have an extensive surface area between the gaseous and  liquid phase, a higher concentration of the solute at the surface  than in the bubble liquid, and walls which are rigid and elastic and reflect light so that they have an opaque appearance.
