Define influence of polyphenols on Carbohydrates?

Binding of proteins may indirectly affect carbohydrate absorption. Inhibition of amylolytic enzymes and subsequent reduction of dietary carbohydrate hydrolysis can decrease the postprandial glycernic response, which can have a beneficial effect for diabetics.
