Addition of Grignard reagents:

Grignard reagents react along with carbonyl compounds to offer alcohols. Nature of alcohol lies on the nature of carbonyl compound.

Addition of water: Carbonyl compounds react along with water to provide gem diols. This reaction is catalysed by acid. The reaction is called as two way reactions.

Gem diols are extremely unstable compounds therefore equilibrium favours the backward direction. The extent to which a ketone or aldehyde is hydrated relies on the stability of gem diol.
