Scenario: you are the Nutrition Manager of a LTC facility with 150 beds. Today is Wednesday and you are putting together your food order for Friday delivery (include am/pm/hs snacks). You hear on the news that there will be an ice storm that may cause power outage on Friday. Your facility typically makes most foods from scratch. However due to the expected power outage (no electricity) this will not be possible. Some foods will need to be purchased ready to eat (RTE), canned or frozen. You want your residents to continue to have fresh and nutritious meals to the best of your ability, using the equipment that still works. Your facility has some power generators for when this occurs but it only powers the following equipment: Freezer, Refrigerator, Stove/Oven and two extra outlet. Post an explanation of why you made those changes to your menu and what your thought process was. Explain which equipment you are going to use for each meal and why.
