Question: The content of carbohydrates I found in the mung bean food sample is 2.06g/100g by the phenol-sulphuric acid method, but the food labeling shows that it has around 42g/100g carbohydrates, why the result underestimate when compare to the actual value?is it because the total carbohydrates label on food includes fiber and sugar alcohols which cannot be found by the phenol-sulphuric acid method?
