Stock Ratio Practice
According to the stock ratio you need 8 Lbs. of bones for every 1 Lb. of mirepoix to produce 1 gallon of stock. The mirepoix ratio is 50% onions, 25% celery and carrots both. Calculate the amount of cut mirepoix necessary for the amount of bones listed. List amount of stock each produces.
