The enzyme tyrosinase is found in large concentrations in plant tissues. This enzyme is responsible for the browning of peeled potatoes and bruised fruits. In an assay to determine the activity of the tyrosinase in a potato extract, the following reaction mixture was prepared:

1ml of potato extract, 2ml of 5mM dopa (3,4-dihydroxyphenyalanine), 0.5ml of 20mM citrate buffer, 0.5ml of 1% hydroquinone and 2ml distilled water.
