Question: Simple and complex carbohydrates are sometimes simply referred to as sugar (simple) and starches (complex) , so these are what many of us think of when we hear carbohydrate. Carbohydrates have been on the forefront of nutrition in recent years with the popularity of low carb diets; these diets do not always differentiate between simple and complex and have many people just not eating carbs which is unfortunate because as we are seeing, glucose and carbs are the preferred energy source for the red blood cells, the brain and other organs/cells in the human body. What about starches, many diets or ways of eating would have us to believe that starches are fattening, are they?
