Water pollution experiment

I have done a water pollution experiment as the chosen environmental issue that's happening today.

This experiment is excellent because it engages many senses. The experiment involves giving each student/group in a class a cup of clean water. Then go around the class, adding a few drops of food coloring (black color if possible to highlight that it is contaminated) to each cup of water. Students then stir the solution, making note of the fact that they can see the "pollution." The same process is repeated, this time adding vinegar to the fresh water. This illustrates how sometimes we can smell "pollution". The third time around, add salt and the students' mix. This highlights that not all pollutants can be seen or smelled (once the salt has dissolved).

What would be the scientific concepts/understandings relevant to the design and working of this experiment.
