"Fermentation can be defined as a metabolic process that breaks down a substance using aerobic processes. Fermentation occurs with Saccharomyces cerevisiae, fungi also known as baker's yeast. In this experiment two different types of yeast, traditional yeast and quick rise yeast, were monitored. The rate of fermentation was measured at 37ºc, incubated in a water bath, the amount of carbon dioxide levels produced in each yeast was recorded for a total of 60 minutes, checking every 5 minutes. The goal is to determine whether or not there is a significant difference in the volume of CO2 produced by the 2 types of yeast under one fermentation condition. It is hypothesised that quick rise yeast will produce CO2 more rapidly compared to the traditional rise yeast. The final value of the traditional rise yeast was 4.1-4.6ml and for quick rise yeast the final values ranged from 2.1-2.8ml, proving the hypothesis that quick rise yeast would produce more CO2 in the 60 min duration."
