CASE STUDY: Restaurant Roster for Front of House
SCENARIO
You are the Manager for High Street Hotel. It has 120 rooms and is located in the Eastern Suburbs of Sydney, NSW. As part of your duties you are required to prepare the rosters for each department in the hotel. Your restaurant team is made up of full time staff who work eight hour shifts on a roster system that gives different days off each week, with a mixture of early and late shifts. Your department has five full-time staff of equal seniority and ability. The names of these staff members are:
JUSTINE ALEX JAI MIRANDA TEO
These staff members have all made requests to have the following days off over the period of the next roster, you must aim to accommodate all requests if possible:
- JUSTINE: Requests all Saturdays off in October
- ALEX: Requests to be rostered off or to get late shifts on Saturdays
- JAI: Requests the 9th - 12th October off (4 days) to go to a family wedding
- MIRANDA: Cannot work Sundays on the 11th and 18th
- TEO: No requests have been made
This establishment requires two staff members for the early shift (7.00 to 15.30) and two staff members for the late shift (15.00 to 23.30) from Wednesday to Sunday and only one staff member per shift on Monday and Tuesday. A third staff member is required for a "swing shift" (09.00 to 17.30) on Fridays to cope with the extra pressure at the end of the week. You may be required to add an additional casual staff member. However this should be done sparingly as it costs extra especially on the weekend shifts.
GUIDELINES FOR PREPARING A ROSTER
- Avoid back-to-back shifts except in response to a request for a particular day off.
- Full-time staff can work no more than 10 days in a row.
- Full-time staff must get two consecutive days off each week, unless there is a particular request for time off and there is no other alternative
- Avoid late finish/early start around a single day off.
- Remember that staff are entitled to annual leave for extended time off.
- Complete the roster making it fair as possible for all staff members
Remember that staff requests are just that, requests. All staff are employed on the condition that they will be rostered according to the needs of the business. However, with the aim of a harmonious workplace, it is customary to accommodate as many requests as possible.
