Here are just a few ingredients derived from yellow dent #2 corn used as ingredients in processed foods: citric acid, lactic acid, glucose, fructose, maltodextrin, ethanol, sorbitol, mannitol, xanthan gum, modified starch, unmodified starch, dextrins, cyclodextrins, MSG (MonoSodium Glutonate), HFCS (high fructose corn syrup), corn syrup, starch, mono-glycerides, di-glycerides, tri-glycerides, ascorbic acid (vit C synthesized from corn). Check the ingredients list on the foods that you typically eat.
Part 1: Discussion board postings.
On the "food ingredients - what are we eating?" discussion board, name two food ingredients from your research for part 2 of this assignment (or from previous experience) that you found and had no idea what they were. Research the ingredients you name and tell us, as specifically as possible (BE UNDERSTANDABLE - interpret what you find), what they are made from, how they are made and why they are in the food. Once an ingredient has been used by someone it cannot be used again so post early if this concerns you! If you run out of ingredients that you wrote about you may choose another. There are literally thousands to choose from!
Part 2: Write a short paper addressing the following points.
Question 1. Name 5 processed foods that you have eaten or fed to your family within the last month that contains at least one of the corn-derived ingredients listed above. List the names of the foods and the ingredient(s) found.
Question 2. See if you can find 5 processed foods that you ate or fed to your family within the last month that contain NO corn-derived ingredients (as far as you can tell). Name the food products. If you have not eaten any, go to the store a find at least two.
Question 3. Name 5 single-ingredient foods (processed or unprocessed) that you or your family ate within the last month.
Question 4. Research the distance food travels (check at least 3 sources) and state the average of the numbers you find that estimates how far our food travels before it reaches our plates.
Question 5. Define the following parts of a seed from a human nutrition standpoint, as well as a plant structure standpoint.
Embryo (germ), endosperm, hull/husk (bran, fiber)
