A time-temperature history for the fruit juice sterilization is given in the following table. The process reference temperature is 121oC and z value is 10oC. Determine the F0 value for the process. Plot the heat penetration curve (temp. vs. time) and lethal rate curve (lethal rate vs. time). What will be the required process time for a lethality equal to a target F0 of 4 min?
