Planning a Catered Event (Menu Planning)
INSTRUCTION:
Choose any one(1) scenario from the 3 SCENARIOS (see below).
Make a menu based on the below-mentioned requirements.
1. Please list the main ingredients of each dish chosen for the menu you have created.
2. Display Menu without ingredients which will be displayed at the buffet for the first two scenarios or an individual menu placed at each place setting for the third scenario.
SCENARIOS
1. Make a Healthy Breakfast menu AND a light Lunch menu. The meeting is for a Board of Directors and the event planner has mentioned that we ensure that healthy items will be part of the menu, in addition, we also need to ensure that no nuts are part of any menu items as there is a severe nut allergy.
OR
2. Make a working Lunch Menu AND a Tea Break menu and include smoothies and replenishable coffee break menu items as part of the tea break menu. The demographic of this meeting are University students. Please list allergy items (8 FDA-approved allergies) if any on the menu created.(example-contains nuts, contain gluten, etc.)
OR
3. Make an hors d'oeuvres reception menu AND a 5-course sit-down menu with soup as the first course. The demographics of the attendees are 30% Americans, 35% East Indian/Asian, and 35% Italians. Make sure that the menu item caters to all groups and guests have been very specific not to have any spicy dishes as part of the menu for the cocktail reception or dinner.
