Red dragon fruit (RDF) is widely cultivated in Malaysia and is well-known for its unique appearance and considerable amount of nutrients such as fiber, potassium, magnesium, vitamins, oligosaccharides and also bioactive compounds (Khalili et al. 2006, Jaafar et al. 2009; Wichienchot et al. 2010; Zainoldin and Baba 2010). Among these bioactive compounds, betacyanins received most attention in food and biological systems. This is likely attributed to the red-violet betacyanins pigments that make it more attractive and appealing to consumers.
