Methods:

Weight 30g Lecithin, and 30g between 40 into the baker

Add 140g oil into the baker

Place the baker in a water bath at 56 °C for 1 hours

After premixing, add 360g oil and 440g water into the baker

Place the baker in a water bath at 56 °C for hours

During each 30 mins, it was hand stirred for 30 sec

Measure the droplet size after hand mix using Mastersizer (Mastersizer 3000 laser light-scattering analyzer (Malvern Instrument Ltd, UK))

Homogenize the mix for two minutes at a maximum speed by a homogenizer

Measure the droplet size after Homogenize using Mastersizer.

The coarse emulsion processing under an ultrasonic processor (BSP-1200 Ultrasonic processor, USA) using a 19650Hz power for 10 minutes

Measure the droplet size after Ultrasonic processing using Mastersizer.
