Methods:

Weight 30g Lecithin, and 30g between 40 into the baker

During each 30 mins, it was hand stirred for 30 sec

Measure the droplet size after hand mix using Mastersizer (Mastersizer 3000 laser light-scattering analyzer (Malvern Instrument Ltd, UK))

Homogenize the mix for two minutes at a maximum speed by a homogenizer

Measure the droplet size after Homogenize using Mastersizer.

The coarse emulsion processing under an ultrasonic processor (BSP-1200 Ultrasonic processor, USA) using a 19650Hz power for 10 minutes

Measure the droplet size after Ultrasonic processing using Mastersizer.
