Assessment

The food and beverage industry faces constant change and ongoing issues. In this assessment you will research and evaluate the dynamics of changing environments in food and beverage establishments in New Zealand, basing your evaluation on the tasks listed below.

Definitions:
Trend: a general direction in which something is developing or changing. This is usually outside the control of an organisation, but its impact affects the ability of the organisation to function in the environment of its industry.

Issue: an important topic or problem for debate or discussion. An issue usually impacts negatively on an organisation or causes a problem which the organisation must address.

Task One

Research and evaluate any TWO of the following changing trends in food and beverage establishments in New Zealand.
- Food habits
- Dining habits
- Disposable income
- Multicultural society
- Dietary requirements
- Organics
- Sustainability
Note: The trends chosen must have impacted the industry significantly in only the last two years or be likely to do so in the future

a) Definition: Write an explanation defining the two current trends you have chosen.

b) Features: -Examine at least two features of each of the chosen trends.

c) Impacts:-Identify and evaluate at least two impacts from each of the chosen trends, using examples. The impacts chosen must have affected the industry significantly in only the last two years or be likely to do so in the future.

d) Strategic Solution/Direction: Develop a strategic solution to address at least one issue caused by one or both trends and justify your solution, giving reasons. You may research and use a strategic solution planner.

Task Two

Research and evaluate any TWO of the following changing economic factors affecting food and beverage establishments in New Zealand.
- Increase in fuel prices
- Increase in minimum wages
- Disposable income
- Economic legislations
Note: The factors chosen must have impacted the industry significantly in the last two years or be likely to do so in the future

a) Definition: Write an explanation defining the two economic factors you have chosen.

b) Features-Examine at least two features of each of the chosen factors.

c) Impacts:- Identify and evaluate at least two impacts from each of the chosen factors, using examples. Note: The factors chosen must have impacted the industry significantly in the last two years or be likely to do so in the future

d) Strategic Solution/Direction: Develop a strategic solution to address at least one issue relating to one or both factors and justify your solution, giving reasons. You may research and use a strategic solution planner.

Task Three

Research and evaluate any TWO of the following staffing issues in food and beverage establishments in New Zealand.
- Lack of skilled labour
- Minimum pay
- Seasonality
- Customer expectations
- Changes in immigration legislation
- Lack of local staff interest

Note: The issues chosen must have impacted the industry significantly in only the last two years or be likely to do so in the future

a) Definition: Write an explanation defining the two staffing issues you have chosen.

b) Features: -Examine at least two features of each of the chosen issues.

c) Impacts:- Identify and evaluate at least two impacts from each of the chosen issues, using examples.

d) Strategic Solution/Direction: Develop a strategic solution to cover one or both issues and justify your solution, giving reasons. You may research and use a strategic solution planner
