1. If the menu was deficient in any of the above beneficial nutrients, what food(s) should you add to the diet? List the negative health outcomes that could develop in a child who continues to eat a diet deficient in each of the following nutrients: protein, dietary fiber, vitamin A, vitamin C, vitamin D, calcium, and iron.
2. Was the menu too high in kcalories? If so, if the child continues to eat this many excess kcalories, what will be the consequence? What food(s) should be eliminated that are high in kcalories? Was the menu too high in total fat, saturated fat, added sugar, and/or sodium? Identify the food(s) that should be eliminated and suggest similar alternative foods that would be lower in saturated fat, added sugar, and/or sodium.
3. What will the consequences be if a child continues to eat a diet containing excess kcalories, saturated fat, added sugar, and sodium?
