Question: What do you think is the biggest issue or trend affecting the food service industry these days? How did this trend or issue come about? What are restaurants doing, or what should they be doing, to address this trend or issue? What are the long term ramifications of this trend or issue?

Prepare a research paper on what you feel is the most pressing or interesting issue or trend facing foodservice today. How will you, as a manager, address the questions presented above?

Be sure that you include at least four industry resources that identify this particular trend or issue as being concerning to the foodservice industry. You may use sources such as the National Restaurant Association, The American Culinary Federation, Council on Hotel Restaurant and Institutional Education, Society for Food Service Management, Hospitality Net, Nation's Restaurant News, or other respected industry resource.

Remember, you want to synthesize the information that you have read, not just restate it. Conduct the research, read through your materials and formulate your own supported opinions and conclusions as to why this issue is important, how it is affecting the industry, and what the industry is doing to address it.

Your thesis statement should be in bold, within the first paragraph of your paper. A thesis statement is usually one sentence that clearly states what you will be proving within the paper. This thesis is the main idea of the paper and should be developed, explained and supported with your resources and examples throughout the paper. Do not include an abstract for this essay.
