Question

You have a young woman come to you requiring a diet plan. She feels fatigued, is often battling colds and flus, and has high blood pressure and fluid retention (oedema). Her skin is often itchy and she has just had a third round of treatment for kidney stones. She often suffers bouts of diarrhoea and constipation. She would like to improve her health as she is planning on having a baby in the next year. She is a lacto-ovo vegetarian, eats fish and gets most of her fat intake from dairy products. She was informed that vegetarians often lack calcium, so she drinks 5 glasses (250ml each) 65 of milk a day and has a snack of cheese (about 100g) with crackers after dinner. She also gets as much sunlight as possible to get vitamin D. Her fruit intake includes a variety of fruits and she likes to eat them peeled and diced with a tub of yoghurt (200ml) for her breakfast. She is partial to smoked salmon and her main lunch meal is smoked salmon (120g) salad with lettuce leaves, tomato, mayonnaise and diced hard boiled egg. Her main dinner meal is generally lentils with fish such as pilchards,
