You have a young woman come to you requiring a diet plan. She feels fatigued, is often battling colds and flus, and has high blood pressure and fluid retention (oedema). Her skin is often itchy and she has just had a third round of treatment for kidney stones. She often suffers bouts of diarrhoea and constipation. She would like to improve her health as she is planning on having a baby in the next year. She is a lacto-ovo vegetarian, eats fish and gets most of her fat intake from dairy products. She was informed that vegetarians often lack calcium, so she drinks 5 glasses (250ml each) 65 of milk a day and has a snack of cheese (about 100g) with crackers after dinner.
