Assignment -

Instructions - The project requirements, as set out, must be closely followed. Please note that the project is intended to illustrate the course ideas and concepts.

Report based on my placement as chef - I am working as head chef in Sunrise Cafe and Kebab House, 428 Marion Road, Plympton, South Australia.

While preparing report kindly read thoroughly all the instruction for respective reports. Also include all the generic hospitality, hotel and restaurant related examples and also theouries related to management and hospitality. (And ask your expert about implication of story about hotel and hospitality industry). Keep in mind that it is Hospitality Industry Experience report based on Sunrise Cafe and Kebab House. Our restaurant is not too big it is single brand and it has future to go n franchise and other grow option. It is fast and Counter service restaurant with multicuisine foods. In every reports there are some theory to relate with workplace so kindly go through all those given in guideline and bring sense on them.

Task and Presentation -

It is your responsibility to decide upon the type of Final Report you wish to submit and notify the Course Coordinator in your Pre Placement Report. The format for the presentation of the final HIE Report should follow the below structure:

Type A - Final Report: Departmental Analysis and Evaluation

Cover/Title Page

Acknowledgements - acknowledge people, institutions and/or organisations who have helped you carry out the research or write your report.

Executive Summary- concise summary of main findings

Table of Contents

List of Figures/Tables/Images/Appendices

Introduction and Background to the Report - how you are going to address the assessment task (methodology) i.e. what you did and how you did it.

Body of Report - the aim of the Final Report is to demonstrate your understanding of the connection between your observations and experience in the workplace and the skills and knowledge gained in previous study in the MIHM. A literature review identifying themes relevant to organisational analyses would be relevant. The following headings (or similar) should be used to analyse your organisation:

External/Industry Environment Analysis - you may wish to use Porter's Five Forces model or a similar model, together with a PEST analysis.

Internal Organisation Analysis - this section should include:

  • Organisational Diagnosis: critical evaluation of your orientation period and induction.
  • Organisational structure and interpretation (incorporate Mission, Vision and Values; Frameworks; Systems); critical evaluation of your department and its relationship with other departments; communication lines - who do people report to in the formal organisation; management roles, responsibilities and interpersonal skills
  • Reflect on the goals you set in the Pre Placement Report. How realistic were these goals and how well you think you achieved them? How will your goals change for your future career? Use Quinn et al (2007) Competing Values Approach to show which areas you have improved on and discuss how.

SWOT Analysis: Using the above research, identify the internal strengths and weaknesses and external opportunities and threats of your organisation. Consider and review operational and practical aspects and consider how theories developed during the MIHM program are reflected in the work environment.

Conclusion - summary of the most significant information/results/findings. You should not include any new material in this section. Sometimes you could indicate some areas where your research has limits or barriers or where further research would be useful.

Recommendations - this includes suggestions for what needs to be done as a result of your findings. Recommendations are usually listed in order of priority.

References - Harvard style in alphabetical order.

Appendices - information that is not essential to explain your findings, but that supports your analysis (especially repetitive or lengthy information), validates your conclusions or pursues a related point.

Type B - Final Report: Special Project Identified by Host Organisation

This is usually a much more challenging type of report requiring deeper research, but it is also very rewarding and beneficial to your future career as a manager. The format for the presentation of a Type B Report is the same as the Type A Report however the focus is on your specific project. This must be approved following consultation with your employing organisation and the Course Co-ordinator. Details that must be documented include the name/title of the project/research, timelines, activities undertaken, outcomes, conclusions and any recommendations if applicable.

Examples of such projects might be:

  • Operational - Evaluation of room service operations and recommendations for their improvement.
  • Project/ Operational Management - Evaluation of the 'Start up' structures and implementation in the opening of a new hotel/ restaurant.

In both types of reports you should consider and review operational and practical aspects and consider how theories developed during the program are reflected in the work environment.

Assessment Criteria - The standards by which the Final Report will be assessed include:

1. An appreciation of contemporary literature on organisation environments and processes

2. A capacity to think strategically

3. The interactions between the organisation and its environments (internal and external)

4. Organisation change and its management

5. The challenges of leading innovation.

6. Acknowledgement of all sources of information and other materials, appropriately referenced

7. Relevance of the content to the task

8. Application of theory from MIHM to industry situations and applications

9. Constructive critical analysis, observation and reflection

10. Clear and effective communication - written, verbal and visual

11. Business style reporting - legible, audible, articulate, engaging and well presented, adhering to guidelines and checked for spelling, punctuation and grammar.

12. Insight, philosophical implications and originality

13. Evidence of independent research of the topic.
