A plant food containing 2% fat (F), 15% non-fat solids (S) and 83% water (all wt%) is pasteurized at 98o C by direct injection of 476 kPa saturated steam. The plant food is fed to the pasteurizer at 100 kg/h and 21o C. Heat capacity in kJ/kg-o C: 1.675 for fat, 0.8374 for non-fat solid and 4.187 for water. Calculate (a) the amount (kg/h) of steam used; (b) the final composition of the pasteurized food product (i.e. wt% of F, S and water).
