As you know, nature chose to amide bond as it peptide bond. To better understand why, scientists synthesized artificial protein mimics that were linked by ester bonds instead of the amide functionality ( the R-group side chains all remained the same). They found that these mimics did not form highly organized structures like those of natural proteins. What would be the reason that would describe this lack of protein folding?
