Scientists use a similar approach to determine the calorie values that are posted on the nutrition labels. they use a better calorimeter and also subtract out any calories contributed by "fiber". Fiber is an indigestible cellulose product that passes through our system without getting metabolized. If your burned food contained a lot of fiber, how would you expect your calorie value to the "posted" calorie value on the box?
