Discuss the reasons for visual color difference

The visual raw meat color was red(outside) and brown(inside) and when mixed with NaNO2 and NaNO3 the color changed to slight maroon and medium brown and pink. And fresh meat was mixed with only NaCl and they changed color to medium brown/slight maroon. What is the reasons for visual color difference?
