Conduct an internal audit in one of the Holmes kitchens and then develop and implement a food safety program.  

1. Internal audit

You must conduct an internal audit of the following procedures in one of the Holmes kitchens. The tasks involved in conducting the audit are

1. Evaluating the current food safety program to check if the required records are being maintained
2. Inspect the receiving area to check if hygiene standards are maintained
3. Inspect the storage area, cold room, dry storage and the freezer and check if the temperature logs are up to date
4. Check if the food items are labeled before storing them in the cold room and the freezer.

2. Review and implementation

1. Identify the critical control points in each area that was audited and make changes if any to the food safety program to control or eliminate the hazard
2. Document the changes to the food safety program and inform the changes to your assessor
3. Make recommendations on how these changes could be informed to the other trainers and the students
