Margaret has had difficulty keeping her weight a level she and her MD consider healthy. Recent attempts include losses of 20, 25 and 15 lbs over the past few years. She has tried variable carbohydrate-sparing diets, only to feel extremely weak most of the day. In between weight loss episodes, she otherwise returns to a daily consumption and convenience of processed foods, largely because her work will cause her to miss meals when last minute deadlines for project completion become a reality. She routinely skips breakfast, loads up on calories at lunch, grabs an energy bar or ice cream cup at dinner, and will eventually settle down at home later in the evening for her largest meal of the day. Total daily calories consumed range between 2400 to 3200. A BMI of 31, an LDL of 145, HDL of 38 and a fasting blood glucose between 115 and 120, her physician has suggested more exercise and coupled with some proper weight loss counseling.
