Case study : East Queensland evacuation centre The recent floods in East Queensland have had a devastating effect on the residents of several townships in the area. Many residents were evacuated and moved to evacuation centres in safe areas. These centres provide the basic accommodation, food, water and medical facilities to the people affected by the floods until their homes can be cleaned and restored to a liveable condition or they can find alternative accommodation. You work for a local hotel that is helping provide food to the evacuation centre. You have been asked to develop a recipe for people who follow a halal diet as part of their religious beliefs. The recipe will be added as one of the dinner options for adults and children at the centre. The evacuation centre has relatively limited kitchen facilities with a small commercial kitchen with four burners and a grill plate, large oven and salamander. These have been expanded with portable refrigeration, barbeques and gas burners.
