Case Study: The scenario is I work in the role of Hospitality Operations Manager at a large tropical resort in North Queensland - 'The Reef'.
The Reef is well known for its beautiful location on the coast of Cairns, with beachfront access and mountain views behind. It has multiple types of accommodation, ranging from bungalows, villas to executive apartment and penthouses.
The Reef has 2 onsite restaurants and 2 cafés for the guests to use at their leisure.
The Reef is planning on renovating the main commercial kitchen that serves the 2 restaurants.
The main areas that will be looked at under the renovation are listed below:
The main cool room in the kitchen
The benchtops in the kitchen
The main cool room is currently not serving the increased capacity required for the resort.
It is too small and overused with staff from both the commercial kitchen and café's relying on it for storage of all refrigerated items
The seals on the door are showing signs of perishing and are failing to seal completely causing a loss of power and spoilage of items at times.
Ideally the resort wants to install a walk-in refrigerated unit with the following set up:
Sliding access door
4 shelves on each of the 3 walls
Large storage capacity
The benchtops in the commercial kitchen were originally installed when the kitchen was smaller and not as busy. To add additional space mobile benches with wheels have been used, this is no longer seen as working due to the additional cleaning needed and the movement in the benches.
Some areas of the kitchen still have laminate benchtops, and this is not up to industry standards and causes additional concern with contamination due to the current state of the laminate which is showing areas of splits and cracks from years of use.
The chosen supplier for cool room is Atlanta refrigeration and the installer is Jindabyne Refrigeration.
The chosen bench top supplier is Brayco and the installer is Mert Tradie.
