New York State is the second largest apple producing state in the U.S. Most of the apples are placed in long term storage under special conditions. For many apples, optimal conditions include refrigeration between 32° F (0° C), a low oxygen concentration of 1-2% and an elevated carbon dioxide concentration of 1-2%. In contrast, the normal atmosphere at ground level is 21% oxygen and 0.04% carbon dioxide. Many kinds of apples can be stored under these altered conditions for 9-12 months. Use your knowledge of respiration; develop a detailed rationale for why low oxygen, high carbon dioxide, and cool temperatures help store apples for many months. Please be specific and describe optimal conditions for enzymes, glycolysis, citric acid cycle, and electron transport. How do these conditions discourage damage from fungi and insects? Remember the goal is to have a crunchy, sweet tasting apple at the end of storage.
