Question 1 - Select a specific animal providing detailed background on it. Make sure to include information such as your reason for choosing it, some historical and cultural background, while also identifying both sustainable and non-sustainable attributes specific to production and consumption.
Question 2 - Applying your knowledge from the past weeks, select a "cut" from this animal. Identify where specifically the "cut" it is from, appropriate cooking methods that could be applied and detailed reasons why these would be appropriate, as they relate to its cooking characteristics.
Question 3 - Provide one example recipe that best demonstrates an appropriate cooking method for your cut. Make sure this recipe demonstrates the attributes required for a good recipe (proper methodology, standardized units of measure, indicators of doneness, proper culinary terminology, etc)
Question 4 - Reflect on this experience and relate it to our/your daily diet choices. Consider the nutritional, economic, environmental and social impacts of meat consumption specific to your chosen animal. Would this change how you buy and consume meat in the future (consider yourself as a consumer and future chef)? Why? Why not?
