The ACME Enzyme Company is annoying to sell Functional Lipids Inc. an enzyme that will be used in creating a functional lipid via esterification. You are the merely lipid scientist with both esterification as well as enzyme experiences. Your goal is to make a new TAG that contains at least 2 linolenic acid at the sn 1 and sn 3 locations with the sn 2 location being an 18:0. The original TAG is 18:2-18:0-18:2. Propose an experiment for the laboratory technician at Functional Lipids Inc. that focuses merely on the hydrolysis part of the esterifications reaction. Define how you would go about testing the enzyme from ACME Enzyme Company for the hydrolytic activity and some significant features on the test system. Also speculate as to what could be the potential source of the enzyme.
