The melting points of a series of 18-carbon fatty acids are: stearic acid (18:0), 69.6 C; oleic acid (18:1(Δ9)), 13.4 C; linoleic acid (18:2(Δ9,12)), -5 C; and linolenic acid (18:3(Δ9,12,15)), -11 C.
