TASK SUMMARY: YOU ARE THE PROJECT MANAGER OF THE PROJECT OUTLINED BELOW AND ARE TO COMPLETE THE PROJECT PLAN TEMPLATE AS PROVIDED IN DETAIL.

Operational Brief:

A chain of well-known Cafés in Sydney and Melbourne has decided to open a smaller version of their larger shops in Canberra. The name of the Café isAroma.

The café in Canberra will be based in Manuka.

The Melbourne and Sydney Cafés have an attached-on site industrial bakery that produces all of their bread, pastries, pies and cakes on site. In Canberra the company's bakery is based in Fyshwick and does not have a café attached to it.The bakery in Fyshwick operates from 0200 (2am) through to 0900 (9am) daily - 7 days a week

The café in Manuka will operate from 0700 (7am) -1600 (4pm) - 7 days a week.

This version will NOT have the bakery on site;however, this café will be receiving all of their required bakery products from their own bakery based in Fyshwick (run by the same company - but at a different location).

You have 3 staff members to assist you throughout the project.

You are to allocate their roles and names in the assessment.

ALLOCATED BUDGET TO COMPLETION AND HANDOVER: $75000.00 (AUD)
Aroma Café Details:

The basic details of the Manuka Aroma café are:
• Will be set up for 16 tables and chairs of up to 4 patrons each
• The café will be located inside a Marketplace
• It will have an underground carpark with small cage storage unit
• Will have a long counter with display units of all the baked goods
• Bread racks will be located behind the counter with a bread slicer nearby
• A large, specialised coffee machine will be to the right of the display units
• The space between the two will be the area that orders are placed
• There is a utility room behind the counter with an additional storage- both refrigerated and cupboard.
• A small space will be allocated for staff in this area as well.

You are to complete the provided Project Plan in detail for the following:
• Complete set up and design of the café at Manuka to the point of opening in 4 weeks
• Including: (but not limited to - include additional information as you see fit)
o Layout and design around current floor-plan as outlined in brief
o Internal building/carpentry/painting/tiling/plumbing/electrical work
o Source and installation of all equipment required (research this to ensure you cover ALL that is required please!)
o Security Systems
o POS (point of sale) Systems
o Storage
o Any other relevant details
• Daily/Weekly/Fortnightly activities and milestones are required as part of the template
• Relevant and detailed communications with all stakeholders is expected and needs to be outlined in the Project Communications area of the template
• The Risk Assessment must be completed for the entire Project as part of the template

• You are the Project Manager
• You are to view every aspect of the project that is required to getting the set up to the opening date for the Owner
• You are to communicate effectively with all Stakeholders
• You are to do external research to assist you in this project if you have no prior experience or hospitality knowledge

TASK SUMMARY:

IN THIS ASSESSMENT YOU WILL BE REQUIRED TO COMPLETE A 4-WEEK BUDGET ALLOCATING YOU TOTAL BUDGET OF $75,000.00 AS CLOSELY AS POSSIBLE TO WHAT THE PROJECT PLAN ALIGNS TO.

TIMELINE: 4 WEEKS
BUDGET: $75000.00 (AUD)
You are to complete the provided Project Budget Template in detail for the following:
• Weekly costings - according to the Project Plan
• 4 weekly allocations to the total of $75000.00
The template provided has areas for you to add information to as applicable.
This will change on a weekly basis - do not keep it the same each week.
Budgeting is important but remember it is also estimating at this point of the project.
Try to have money in reserve for the unexpected
Be sensible with your amounts - research this to be accurate as possible (remember that hospitality often buys in bulk and therefore has large savings on items such as crockery/cutlery etc)
IF it appears you are going to go OVER the budget - review your amounts to ensure you stay within the allocated amounts.
At week 4 there is an area for notations of how you have made adjustments or corrections to the budget should you seem to be going OVER the budget. Use this.
