Kitchen Nightmares

Congratulations, you have just been promoted to sous chef in the kitchen of a popular restaurant! You are reflecting on your good fortune and assessing the situation, including who you will be supervising, when you realize that there is an older chef who is underperforming. According to the human resource files he has been warned about his performance repeatedly, but a recent evaluation still shows a serious need of improvement. He does not respond well to criticism and has not shown any effort to improve his skills.

In addition, two of the younger employees are often late for work- sometimes showing up as late as 45 minutes past the start of their shifts. Finally, there's a lot of quarreling in the kitchen that seems to stem from generational gaps between young and older employees. You end your shift each night discouraged and uneasy. You know that you need to step in, but you're unsure of how to get started.

Case Study Questions

1. How will you deal with the older chef who is underperforming?

2. How would you handle the younger employees' tardiness?
