Nancy Thayer has just been appointed as the food service director for the Pounds Away Diet Ranch in the southwestern part of the United States. The facility is a health-oriented resort that targets people who want to lose weight in a relatively short period of time (three to four weeks).
The ranch prides itself on its tasty food service (rather than a spartan diet of bland food) and has several amenities designed to appeal to people who want to return to good physical condition, including two swimming pools, spas, exercise rooms, and outside recreational activities such as bicycle trails, hiking paths, and horseback riding.
Nancy was hired to reinvigorate the menu for the ranch, as the menu basically has not changed in five years and the ownership is concerned that the resort's reputation is slipping as a mecca for healthy food that tastes good (served in moderate portions, of course) compared to some of its competitors.
Nancy is a graduate of a hospitality program at a notable university where her own situation (she once weighed 300 pounds and is now 140 pounds) caused her to take nutrition courses along with her food and beverage and other hospitality industry coursework.
She thinks, "I'm fully familiar with the basic food groups, the government's MyPlate program, and the Dietary Reference Intakes regarding minerals and vitamins. I think I can make tasty breakfasts, lunches, and dinners by using interesting ingredients."
