A single-effect evaporator system with thermal recompression is being used to concentrate skim milk from an initial total solids content of 9.5%to 25%. The product feed temperature is 5°C and the evaporation is occurring at 57.38 kPa. The heating medium for the evaporator is steam at 100°C. If the product feed rate is 8250 kg/hr, calculate (i) the steam economy, and (ii) efficiency improvement achieved by the use of mechanical recompression system.
