Fructose, fruit sugar (C₆H₁₂O₆) or ketohexose

         It is present in abundance in fruits and hence is named fruit sugar. It is also exist in cane sugar and honey alongwith glucose in mixture form. The polysaccharide inulin is a polymer of fructose and gives only fructose on hydrolysis. Since physically founding fructose is laevorotatory, it is also named as laevulose.

Preparation of Fructose, fruit sugar  :

         (i) Hydrolysis of cane sugar

         The solution having same atoms of D-glucose and D-fructose is termed invert sugar and the process is known as inversion.

•           The excess of sulphuric acid is neutralised by adding milk of lime. A little more of lime is included which changes both glucose and fructose into calcium glucosate and calcium fructose respectively.

         (ii) Hydrolysis of Inulin with dilute sulphuric acid
